Description: The Capon is the undisputed centerpiece of gourmet holiday tables. It is a young castrated rooster, carefully raised for at least 5 to 8 months, with the final weeks dedicated to fattening. This unique process encourages intramuscular fat infiltration, giving its meat exceptional tenderness, incomparable juiciness, and a fine, slightly buttery flavor. More refined than turkey, it offers a melting texture that does not dry out during cooking. The pinnacle is the Bresse Capon (PDO), the only poultry in the world to hold a Protected Designation of Origin, recognizable by its blue feet and traditional swaddling.
