Its mild and subtle flavor makes it a highly appreciated ingredient in gourmet cuisine. Sole can be prepared in various ways, whether grilled, pan-seared, baked, or en papillote. When fresh, the shelf life (DLC) of Sole is relatively short, typically ranging from a few days to a week, thus preserving the freshness and quality of the fish. However, for extended preservation and increased convenience, our Soles are also available frozen, providing a longer shelf life, lasting for several months, while ensuring impeccable flavor and texture once thawed.

Sole is primarily caught from March to November.

The best season to enjoy it is winter, when its flesh is at its finest and most flavorful.

Avoid consuming it between February and April, the fish’s breeding period.

To choose quality sole, opt for medium-sized specimens with firm flesh and bright eyes.
